hi, as said rhino is not the best software for this type of work.
As for the working method it is not easy to explain and there is no standard procedure.
In my case we always have a render or a sketch of how the finished product should come. from there you start to find out what could be the best structure according to what you want to get (iron, wood or a mix between the two) and then study the fillings.
Maybe you start with multiple versions and then converge on what represents the best compromise.
