gauge o operating pressure e time step caso unsteady

I read in the manual that fluent uses as ptot the sum of gauge and operating pressure. but which one should I set? leave 0 in the gauge or put the operating or vice versa?
I have another question. When set unsteady at the end of processing the program will give me the results at a given moment, but what can I set it up and if you like? also when I go to iterate how to choose the correct time step size and the number of time steps?
